  • Bread Ingredients:
  • 1/3 cup oil
  • 2 large eggs
  • 3 Tbsp lemon juice
  • 1/2 cup powdered sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup oat milk or milk of choice
  • 2 Tbsp grated lemon zest
  • 1 cup white sugar
  • Glaze Ingredients:
  • 1 Tbsp lemon juice

Directions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. Lightly grease an 8×4-inch loaf pan.
  3. 3. Prepare the bread batter: Beat sugar and lemon zest (this helps bring out the lemon oil in the zest) for 1-2 minutes.
  4. 4. Add the oil, eggs, and lemon juice to the sugar mixture and mix until light and fluffy.
  5. 5. Combine Oatsome Oat Flour Blend, baking powder, and salt in a separate bowl. Add the flour mixture in thirds, alternating the egg mixture with oat milk or milk of choice.
