  1. 1. In a small sauté pan, toast the oats and almonds with 1/2 Tbsp avocado oil over medium-low heat until fragrant and lightly golden brown. Add the salt and cinnamon, cooking for an additional 5–10 seconds to toast the spices. Stir in the maple syrup and cook for another minute, until the mixture becomes sticky and caramel-like. Set aside.
  2. 2. In a separate pan, heat the remaining 1/2 Tbsp avocado oil over medium heat. Place the peach halves cut-side down in the pan and cook for 5–8 minutes, or until caramelized to your liking.
