Instructions
- 1. Preheat the oven to 350°F.
- 2. Line the bottom of a 9 by 9 inch baking pan with parchment paper or lightly coat it with cooking spray.
- 3. In a mixing bowl, combine the brown sugar, oats, oat flour blend, cinnamon, baking powder, and salt. Stir to combine.
- 4. Add the melted coconut oil and vanilla extract. Mix until all the liquid is absorbed and the mixture becomes crumbly. Set aside 1 cup of this mixture aside for the topping.
- 5. Press the remaining oat mixture evenly into the bottom of the prepared pan to form the crust.
- 6. In a separate bowl, mix the blueberries, lemon juice, brown sugar, and cornstarch until well combined. Spread the blueberry mixture evenly over the crust.
- 7. Sprinkle the reserved crumble mixture over the blueberries and gently press it down.
- 8. Bake for 30–35 minutes, or until the top is golden brown.
- 9. Let the bars cool in the pan for at least 10 minutes before slicing.
- 10. Cut into squares.
