Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Line the bottom of a 9 by 9 inch baking pan with parchment paper or lightly coat it with cooking spray.
  3. 3. In a mixing bowl, combine the brown sugar, oats, oat flour blend, cinnamon, baking powder, and salt. Stir to combine.
  4. 4. Add the melted coconut oil and vanilla extract. Mix until all the liquid is absorbed and the mixture becomes crumbly. Set aside 1 cup of this mixture aside for the topping.
  5. 5. Press the remaining oat mixture evenly into the bottom of the prepared pan to form the crust.
  6. 6. In a separate bowl, mix the blueberries, lemon juice, brown sugar, and cornstarch until well combined. Spread the blueberry mixture evenly over the crust.
  7. 7. Sprinkle the reserved crumble mixture over the blueberries and gently press it down.
  8. 8. Bake for 30–35 minutes, or until the top is golden brown.
  9. 9. Let the bars cool in the pan for at least 10 minutes before slicing.
