Ingredients

  • Oat flour sugar cookies:
  • 1 1/2 cups butter
  • 1 cup sugar
  • 1/4 tsp baking powder
  • 1 egg
  • 1 tsp vanilla extract (optional)
  • 3/4 tsp salt
  • Cream cheese topping:
  • 2 packages (8 oz) cream cheese, softened
  • 2/3 cup sugar
  • 1 tsp vanilla
  • Fruit toppings:
  • 1 cup halved or quartered fresh strawberries
  • 1/2 cup fresh blueberries
  • 2-3 bananas, sliced

Instructions

  1. 1. Preheat oven to 375°F.
  2. 2. In a large bowl, beat the butter with a mixer on medium to high speed for 30 seconds.
  3. 3. Add the sugar and baking powder, and beat until well combined.
  4. 4. Add the egg and vanilla extract; continue beating until fully incorporated.
  5. 5. Add the salt and Oatsome Oat Flour. Mix until the flour is fully combined. The dough will be slightly sticky.
  6. 6. Scoop the dough onto a parchment-lined baking sheet and spread it evenly to cover the bottom of the sheet.
  7. 7. Bake for 25 minutes, or until the edges are golden and the center is firm to the touch.
  8. 8. Remove from the oven and let cool completely.
  9. 9. In a small bowl, beat the cream cheese, sugar, oat milk, and vanilla with an electric mixer on medium speed until fluffy.
