- •3/4 cup pumpkin puree
- •1/3 cup coconut sugar
- •1/4 cup cashew butter, or other nut or seed butter
- •1/4 cup coconut oil, melted
- •1/2 tsp vanilla extract
- •
- •1 egg
- •1 tsp chai spice mix
- •1 1/2 tsp baking powder
- •3/4 tsp baking soda
- •1/2 tsp sea salt
- •For the glaze:
- •1/4 cup cashew butter
- •2 Tbsp maple syrup
- •3 Tbsp coconut oil, or more as needed
- •turbinado sugar, to sprinkle on top
Directions
- 1. Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners or lightly grease with coconut oil.
- 2. Heat the Oatsome Oat Milk until steaming. Steep the black tea or chai tea bag in the milk for 5–10 minutes, following package directions.
- 3. Once steeped, whisk together the oat milk, pumpkin, coconut sugar, cashew butter, coconut oil, vanilla extract, and egg until well combined.
- 4. Add the oat flour blend, chai spice mix, baking soda, baking powder, and salt. Stir until just combined.
- 5. Divide the batter evenly among the muffin cups.
- 6. Bake for 20–22 minutes, or until a toothpick inserted into the center comes out clean and the muffins spring back when lightly pressed.
- 7. Let muffins cool completely on a wire rack.
