Ingredients

  • 1 chai or black tea bag
  • 3/4 cup pumpkin puree
  • 1/3 cup coconut sugar
  • 1/4 cup cashew butter, or other nut or seed butter
  • 1/4 cup coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 tsp chai spice mix
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp sea salt
  • For the glaze:
  • 1/4 cup cashew butter
  • 2 Tbsp maple syrup
  • 3 Tbsp coconut oil, or more as needed
  • turbinado sugar, to sprinkle on top

Directions

  1. 1. Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners or lightly grease with coconut oil.
  2. 2. Heat the Oatsome Oat Milk until steaming. Steep the black tea or chai tea bag in the milk for 5–10 minutes, following package directions.
  3. 3. Once steeped, whisk together the oat milk, pumpkin, coconut sugar, cashew butter, coconut oil, vanilla extract, and egg until well combined.
  4. 4. Add the oat flour blend, chai spice mix, baking soda, baking powder, and salt. Stir until just combined.
  5. 5. Divide the batter evenly among the muffin cups.
  6. 6. Bake for 20–22 minutes, or until a toothpick inserted into the center comes out clean and the muffins spring back when lightly pressed.
