Ingredients

Servings: 1
  • cake:
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 2 eggs
  • 3/4 cup sugar
  • 1/4 cup dark brown sugar
  • 1 tsp vanilla extract
  • 1/3 cup whole milk
  • 4 Tbsp olive oil
  • frosting:
  • 1/2 cup butter, room temp
  • 3 cups powdered sugar
  • 1 Tbsp heavy cream
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 tsp molasses
  • colored sprinkles for topping

Directions

  1. 1. Cake: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. 2. In a small bowl, whisk together the All-Purpose Baking Mix, salt, and baking powder.
  3. 3. In a large bowl, combine the eggs, granulated sugar, brown sugar, vanilla, and olive oil. Whisk until the sugars are dissolved and the mixture becomes smooth, lighter in color, and forms a ribbon when the whisk is lifted.
  4. 4. Add the flour mixture and milk to the wet ingredients. Whisk until just combined and smooth.
  5. 5. Pour the batter into the prepared pan and bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
  6. 6. Allow the cake to cool completely before assembling.
  7. 7. Frosting: In a large bowl, use a hand mixer to beat the room-temperature butter until light and fluffy.
  8. 8. Add the powdered sugar one cup at a time, mixing well after each addition.
  9. 9. Add the heavy cream, molasses, vanilla, and salt.
  10. 10. Continue mixing for 3–5 minutes, until the frosting is very light and fluffy.
  11. 11. Assembly: Cut the cooled cake into pieces sized to fit your serving vessels.
  12. 12. Layer the cake and frosting, using two layers of cake and ending with a layer of frosting on top.
  13. 13. Smooth the frosting, then gently press the top into a plate of your favorite sprinkles to create the classic dot-cake finish.
  14. 14. Enjoy your Gluten-Free Brown Sugar Dot Cakes!
