  • Crust and Topping:
  • 1/2 cup sliced almonds
  • 1/2 cup coconut sugar
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup butter, cut into 1/2 inch pieces
  • 1 large egg
  • 1 tsp pure vanilla extract
  • Filling:
  • 4 cups fresh or frozen cranberries
  • 1/3 cup granulated sugar
  • 1 Tbsp fresh orange juice
  • 2 tsp orange zest
  • 1 Tbsp cornstarch
  • 1 tsp pure vanilla extract

Directions

  1. 1. Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper and set aside.
  2. 2. In the bowl of a stand mixer (or using a hand mixer), combine the Oatsome Oat Flour, Oatsome Rolled Oats, almonds, coconut sugar, granulated sugar, baking powder, and salt. Mix for about 30 seconds, until thoroughly combined. With the mixer on low, add the butter and mix until the mixture resembles coarse sand (about 2 minutes). Add the egg and vanilla, and mix until fully combined.
  3. 3. Transfer half of the crumble mixture to the prepared pan. Use your hands or the back of a measuring cup to press it evenly into the bottom to form the crust.
  4. 4. In a separate bowl, toss together the cranberries, sugar, orange juice, orange zest, cornstarch, and vanilla.
  5. 5. Spread the filling evenly over the crust, then sprinkle the remaining oat mixture evenly over the cranberry layer.
  6. 6. Bake at 350°F for 40 to 45 minutes, or until the top is golden brown and the berries are bubbling. Allow the bars to cool completely before removing them from the pan and cutting into squares.
