Matcha Muffins

Ingredients

Servings: 1
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1 Tbsp matcha powder, ceremonial grade
  • 1/2 cup avocado oil
  • 1/2 cup maple syrup or agave
  • 1 large egg
  • 2 Tbsp sugar in the raw for sprinkling on top

Instructions

  1. 1. Preheat your oven to 375°F.
  2. 2. Whisk together the flour, baking powder, salt and matcha in a bowl.
  3. 3. In a separate bowl, whisk together the oil, maple syrup, oat milk and egg unt il well combined. Pour the dry ingredients in with the wet and mix until smooth. You want to mix by hand for about a minute, just to form a little gluten and hold in the batter.
  4. 4. Pour the batter into six muffin lined muffin cups and sprinkle in the raw sugar. Bake at 375°F for 20 - 25 minutes or until you can insert a toothpick and it comes out clean.
